The Wonderful World of Beetroot

"How do I love thee? Let me count the ways." Beetroot truly is one of nature's little wonders. What's not to love about this humble root vegetable? It's easy to grow, incredibly versatile, bursting with colour, and packed full of goodness.

From vibrant juices and hearty soups to crunchy salads, tangy pickles, indulgent brownies, and even roasted simply with balsamic vinegar, garlic, and thyme, the possibilities are almost endless. And then there's its appearance. That deep ruby-purple colour is enough to convince you that it's hiding something special inside—and thankfully, it is.

Beetroot has long been celebrated as a nutritional powerhouse, rich in antioxidants, vitamins, minerals, and natural nitrates that may help support heart health, stamina, and overall wellbeing. It's one of those ingredients that manages to be both comforting and nourishing, making it a firm favourite in my kitchen.

Yesterday, I prepared a batch of beetroot and homemade stock ready for today's lunch and couldn't resist sharing one of my simplest and most satisfying recipes. Fair warning though: if you enjoy this one, there will almost certainly be more beetroot recipes to come, because this glorious superfood is one of my absolute favourites.

Easy Beetroot Soup

Serves 4

Ingredients

  • 6 medium beetroots

  • 1 onion, chopped

  • 1 carrot, chopped

  • 1 clove garlic, crushed

  • 1 tablespoon olive oil

  • 1 litre chicken or vegetable stock

  • Salt and freshly ground black pepper

  • Cream, to serve (optional)

Method

Begin by preparing the beetroot. Wash thoroughly and trim away the leaves and most of the stems. Place the whole beetroots in a large saucepan, cover with water, and bring to the boil. Reduce the heat and simmer for around 30 minutes, or until tender.

Carefully drain the hot water and refill the pan with cold water. Once cool enough to handle, the skins should slip off easily by gently rubbing them between your fingers. Discard the skins and cut the beetroot into quarters.

Heat the olive oil in a large saucepan and gently cook the onion until softened. Add the garlic and carrot and cook for another few minutes until fragrant.

Pour in the stock and add the prepared beetroot. Season with salt and pepper and allow everything to simmer together for around 15 minutes, letting the flavours combine beautifully.

Blend until smooth using a hand blender or food processor. If you're serving immediately, gently reheat if needed. Alternatively, allow the soup to cool and store in the fridge, reheating portions as required.

Serve with warm crusty sourdough bread and a generous swirl of cream for an extra touch of indulgence.
